500 gr oyster mushrooms, 1 onion, 1 large carrot, 2 liters of water, 2 chickenbouillon cubes, 100 gr butter, 100 gr of flour,
garlic oil, herbs of your choice
Cook the onion, the carrot, the stalks of the oyster mushrooms and 150 grammes of the oyster mushrooms in 2 liters of boiling water. Add the bouilloncubes.
Meanwhile, cut the remaining oyster mushrooms into small pieces and brown them in a hot pan with some garlic oil.
When the vegetables are cooked, filter the bouillon and mash the oyster mushrooms with a mixer. Throw the remaining vegetables away. Make a sauce with butter, flour and bouillon. When the sauce is ready, add the remaining bouillon and boil it again. Add the mashed oyster mushrooms. Season with pepper and salt. Beside the stove, add the fried pieces of oyster mushroom to the soup. Just stir up and serve with a piece of toast.
BREADED OYSTER MUSHROOMS
Ingredients : oyster mushrooms, egg, (herbs)breadcrumbs, olive oil or butter
Roll the oyster mushrooms in the mixed egg, then turn the fungi in the breadcrumbs and bake them in a pan with hot butter or olive oil.
Tip: put the breadcrumbs in a plastic bag together with the oyster mushrooms and shake it.
Thus, they will all be nicely covered with the breadcrumbs.
PASTA WITH OYSTER MUSHROOMS AND MASCARPONE
pasta of your choice (spaghetti, noodles, spirrelli etc..), remaing pieces of pork, chicken or other meat, 250 gr of oyster mushrooms, 250 gr mascarpone, 1 shallot,
1 onion, 1 clove garlic, 150 gr bacon, olive oil, white wine
Boil the pasta. Meanwhile cut the vegetables and meat into fine small cubes. Brown the baconcubes in olive oil. Add the onion, the shallot, the oyster mushrooms and the garlic. After a few minutes, add the meat. When the meat has warmed up, add the mascarpone.
If you like, you can add some dry white wine.
A nice glass of dry white wine to drink with it makes it delicious.
OYSTER MUSHROOMS WITH HERBS- OR GARLIC BUTTER AND BACON – BBQ
per person: 1 large oyster mushroom, slices smoked bacon, herbs- or garlic butter
Rub the oyster mushrooms in with herbs- or garlic butter and wind them in bacon. Put them on a gridiron and bake slowly. This dish can be served as a vegetable or as a starter.
ENVELOPED OYSTER MUSHROOMS – BBQ
Onion or shallots, oyster mushrooms, scampi or fish of your choice, olive oil, white wine, cream, herbs at your choice, aluminium foil to envelop.
Cut the onion or shallots and oyster mushrooms very fine. Put them on a large piece of aluminum foil (take this quite large) some scampi or a piece of fish of your choice.
Put some of the shredded onion/shallots and oyster mushrooms. Herbs of your choice. Close the aluminium foil from the edges very well (several times) but leave one side open. Now you can add a little olive oil, a dash of white wine and a little bit of cream. Now you can close the last piece of the envelop.
Bake it gently. The envelop serves as a kind of steamoven. Serve with French loaf and a glass of white wine.
Very good as starter and the beginning of a successful barbecue.
